Ney Pathiri / Ney Pathal ( Deep Fried Rice Roti)

Ney Pathiri / Ney Pathal / Fried Rice roti, its a speciality of kerala malabar region and one of the popular Ramzan recipes. So here is the recipe for you all to try during this Ramadan season..



Ingredients
  • Rice Flour 2 cups slightly roasted
  • Fresh Coconut 1 cup grated
  • Shallots / Small Onions 5 - 6 
  • Fennel Seeds 1 tsp
  • Water 2 cups
  • Salt
Method

Boil water in a sauce pan add salt and simmer heat, slowly add rice flour and combine well with a spoon, remove from the heat close with a lid and keep it aside.

In a blender add coconut , fennel seeds and shallots and pulse it for one time, just crushed.

When it is still warm, but manageable to knead, knead well with hands to fine dough without adding water. Add the ground coconut mixture and mix well.

Apply oil into your fingers and palm to avoid the dough sticking to the hand and make small balls of the dough. Roll into thick pooris using a rolling pin OR just flatten it using your fingers by placing it on a plastic sheet or banana leaf, it should not be too thin. you can make exact round shape or like flower shape which I made, first we can make round shape and you can just give a twist on the edges to get a flower shape. 

Heat a Kadai with oil on medium flame, when it hot, slide pathiri into the hot oil after sometimes it will float on top and puff up. As soon as it puffs up, flip it over and fry both sides until golden and crispy.

Serve warm with Varutharacha Kozhi Curry or any other curries. Enjoy..

NB: We can use Parboiled rice instead of rice powder to make this pathiri, actually thats the traditional way of making this. Now we all staying out side Kerala and using the easy method. If you want to use par boiled rice, then take 2 cups rice soak the rice over night, grind it along with 1/2 cup of water until to get a coarse mixture(do not add more water), we can crush together coconut, shallots and fennel seeds, add this to the rice mixture add salt too and combine well. If you feel the batter is loose u can add some rice powder and make it a smooth dough rest of the procedure as same we did in above recipe. So you can try both way. Enjoy cooking.
