Peanut and Coconut make awesome combination for chutneys. Here is a quick and easy chutney recipe for you all to try.
- Coconut 1 cup, grated
- Peanuts 1/2 cup
- Green Chilli 2 nos chopped
- Garlic Cloves 2 nos chopped
- Ginger small piece chopped
- Salt
- Water 1/2 cup
To Temper
- Oil 2 tsp
- Mustard Seeds 1/4 tsp
- Dry Red chilli 2 nos
- Curry Leaves 2 sprigs
Method
Heat a pan and dry roast peanuts nicely, once its medium done add ginger, garlic, green chilli and coconut into it and roast for 2 minutes. Put off flame and keep for sometime.
Grind roasted peanut mix with salt and water to form a medium -thick paste. If the paste is too thick, you can add little more water. Season with salt.
Heat 2tsp oil in a pan and splutter mustard seeds. Add dry chilli and curry leaves saute for few seconds. Pour the Peanut-Coconut paste into the pan , stir everything well and remove from heat.
Serve it with Idli, Dosa, Pongal and Rice..
NB: If you want grind some cumin seeds or curry leaves or coriander leaves along with Peanut- Coconut, and it will give some flavour and even taste more wonderful. You can add green chilli according to your spice level. Enjoy..
