Sweet Plantain Filled Wheat Crepes

Its a nutrient-dense breakfast or Snack. Crepes often have a filling of syrup , fresh fruit or mixed berries and cream etc.. Here i have made a healthy crepe version. Hope you all will like it.



Ingredients

For the Wheat Crepe
  • Wheat flour  1 cup
  • Rava (Semolina) 1 tbsp
  • Salt 1/2 tsp
  • Water 1 1/2 cup (little more or less)

For the stuffing
  • Plantain(Riped) 2 cut into small pieces
  • Coconut 1/2 cup grated
  • Raisins  2 tbsp
  • Cashew nuts 2 tbsp
  • Cardamom powder 2 tsp
  • Sugar 2 tbsp
  • Ghee 2 tbsp
Method

Mix the flour, Rava, salt with water to make thin runny batter. Keep it aside.

Heat a pan put ghee and add cashew nuts and raisins and saute for 1 minute. Now add chopped plantain and saute for 2 minutes. Add grated coconut and mix well. Add sugar and combine the mixture well. Now sprinkle cardamom powder and mix well. Remove from fire and keep it aside. 

Heat a non stick tawa and pour a ladle full of batter on to the tawa. Spread the batter so as to make a very thin crepe. When one side is cooked (1-2 minutes), flip it over and cook for another minute until golden brown. If you want it more crisp, wait for one more minute so that brown spots start appearing. 

Remove the crepe and place it on a plate. Spoon the filling and place it on the centre of the crepe and spread slightly. ( around 2tbsp to 3 tbsp of filling for each crepe). 

Fold the crepe, cut into half and serve warm.

NB: Here i used Wheat flour instead of that you can use Maida (all purpose flour ) to make crepes. You can add egg also with wheat flour or maida to make crepes. I just tried the healthy version. Enjoy cooking..
