An easy dish I could make using lotus root. It has white crunchy texture and sweet taste. Its very common in Chinese and Japanese cooking. The lotus root is very filling and is a good source of dietary fiber. It supports proper digestion, aids blood circulation, positively affects mood, boosts the immune system, normalises blood pleasure, prevents cold, cough, flu, infections and other common diseases, good for the skin, promotes weight loss and reduces risk of cancer.
- Lotus Root 150gm
- Sesame Oil 1 1/2 tsp
- Sesame Seeds 2 tsp
- Sugar 1 tsp
- Soy Sauce 1 1/2 tsp
- Salt
Method
Peel and slice the lotus root 2 -3 mm thick. Place on large plate. Pour the sesame oil and a pinch of salt and mix it up to coat evenly. Line the oven tray with a sheet of aluminium foil.
Pre heat oven for 5 minutes in 180 degree, now reduce temperature into 160 degree and place the lotus root on the foil and keep in the oven and toast for 5 minutes.
Dry roast sesame seeds and keep it aside. Combine roasted sesame seeds, sugar and soya sauce. Once the lotus root has finished toasting, add it to the sauce while still hot and mix well.
Its ready to serve.
NB: The toasting time will vary depending on your oven, so keep your eye on them as they toast, don't over toast as its loose the crunchiness. Just want to avoid the raw taste, thats all. You can adjust the flavour to your taste.
