Beetroot Chutney

Easy and healthy chutney to make.  Chutneys are great with idli, dosa and with warm rice. This is made with beetroot, onion and tamarind. I know you will love this chutney colour and taste. Here is the recipe for you all to try.


Ingredients

  • Beetroot 1 large peeled and cut into chunks
  • Onion 1 medium choppped
  • Ginger 1 medium piece chopped
  • Garlic  1 clove chopped
  • Green chilli 2 nos chopped
  • Dry red chilli 2 nos chopped
  • Cumin seeds  1 tsp
  • Turmeric powder a pinch
  • salt
  • Tamerind pulp 1 tbsp

For seasoning

  • Oil 2 tsp
  • Mustard seeds 1 tsp
  • Dry red chilli 2 nos
  • Curry Leaves few

Method


Grind together beetroot, onion, ginger, garlic, green chilli, dry chilli, cumin seeds, turmeric powder, salt and tamarind pulp to a coarse paste. Add little water if needed. 

Heat oil in a pan add in mustard seeds, dry red chilli and curry leaves. Pour the grinded mixture into this and cook for few minutes. Combine well and remove from fire and pour in a bowl and serve with Idli, Dosa or with warm Rice.

NB: If you want you can saute the ingredients first in oil and once cool grind then season with mustard seeds and all, that also tastes good. If you add Shallots instead of Onion that gives good taste, i don't get shallots here so used onion. Enjoy cooking..
