Mild and flavourful side dish with Pineapple. Its a medium gravy type and good with Roti or Rice. Here is recipe for you all to try.
- Pineapple 1 medium size, peeled and cut into cubes
- Red Chilli Powder 1/2 tsp
- Turmeric Powder 1/4 tsp
- Dry Red chilli flakes 1/2 tsp
- Onion 1 medium size, sliced
- Green Chilli 3 nos, chopped
- Garlic 2 cloves, chopped
- Curry Leaves 2 sprigs
- Coconut Milk 1 tbsp
- Sugar 1/2 tsp
Heat pan on medium flame with little oil. Once the oil is hot add the sliced onions and saute well till it turns light brown. Now add the chopped garlic, chopped green chilli and 1 sprig curry leaves and stir well. Then add the pineapple cubes and mix well. Add chilli powder, turmeric powder and chilli flakes and combine well. Add salt and little water and mix well. Cover and cook for 3 minutes. When its done add coconut milk and sugar, combine well. Add curry leaves now and remove from heat and serve with rice.
NB: You can use canned pineapple also for this recipe. Drain juice and use pineapple chunks. You can add little juice also, it tastes good. Enjoy cooking..
