Avocado Pasta Salad

Cold pasta salad for summer. It contains my favourites - cherry tomatoes and creamy avocados. The best part of this recipe is the avocado dressing, full of flavour and silky smooth. This can be served as a starter or main dish and can be prepared ahead of time so good for weekend parties. Here is recipe for you all to try.

  • Pasta Rotini / Tie Pasta 2 cups
  • Cherry Tomatoes 1 cup, diced
  • White Onion 1 medium size, finely chopped
  • Avocado 1 diced
  • Green Chilli 1 or 2, finely chopped
  • Coriander Leaves few, chopped
  • Lime Juice 1 tsp
For the Dressing

  • Avocado 1 ripe
  • Lime Juice 1 1/2 tbsp
  • Cumin Seeds 1/2 tsp
  • Garlic 2 cloves
  • Coriander Leaves few chopped
  • Butter Milk 1/2 cup
  • Black Pepper Powder 1/4 tsp
  • Olive oil 1 tsp
  • Salt

Cook pasta according to package directions. Drain and run under cold water. Toss diced avocado and lime juice and keep aside.

Place all the dressing ingredients in a blender and process until smooth.

Now add diced cherry tomato, chopped onion, green chilli and coriander leaves to the pasta and mix well.

Add dressing into the pasta and combine well. Refrigerate 1 hour before serving.

We can keep this salad in the refrigerator for 2 days.

NB: If you like cooked crisp bacon you can add that also to this salad. Black pepper powder and green chilli adjust according to your spice leval. Enjoy cooking..
