An awesome healthy alternative to the usual blueberry muffin. Its good for healthy breakfast because it has oats, wheat flour, walnut, blueberry and egg. Here is simple, delicious and healthy blueberry muffin recipe.
Ingredients
- Blueberries 1 cup
- All Purpose Flour 3/4 cup
- Wheat Flour 3/4 cup
- White Sugar 3/4 cup
- Quick cooking Oats 1/2 cup
- Baking Powder 1 tsp
- Baking Soda 1 tsp
- Salt a pinch
- Walnuts 1/2 cup, chopped
- Banana 1, mashed
- Buttermilk 1 cup
- Egg 1
- Vegetable Oil 1 tbsp
- Vanila Extract 1 tsp
Method
Preheat oven to 280 degree C, for 10 minutes. Grease a 12 cup muffin pan or line with paper muffin cups.
In a large bowl, stir together the all purpose flour, wheat flour, sugar, oats, baking powder, baking soda and salt. Gently stir in blueberries and walnuts. In a separate bowl mix together the mashed banana , butter milk, egg, oil and vanilla. Pour the wet ingredients into the dry, and mix just until blended. Spoon into muffin cups, fill 3/4 th portion of the cups.
Reduce the oven temperature into 180 degree C and bake for 15 to 20 minutes, or until the tops of the muffins light brown in colour. Serve with hot tea.
NB: Here is used self raising flour so i didn't put baking soda. Oats if its long grains then just crush in the blender and add. If using vanilla essence add 1 1/2 tsp. Cooking time may vary depends on your Oven. Enjoy cooking..
