Peechingai Kootu, simple and nice vegetarian side dish. It doesn't need any grinding procedures, its tasty and healthy. Here is recipe for you all to try.
- Ridge gourd / Peechingai 1, peeled and chopped
- Chana Dal 1/2 cup
- Green Chilli 3 slited
- Onion 1 medium, chopped
- Garlic 2 cloves, chopped
- Turmeric Powder 1/4 tsp
- Red Chilli Powder 1/4 tsp
- Salt
- Curry Leaves 2 sprigs
- Mustard Seeds 1/4 tsp
- Cumin Seeds 1/4 tsp
- Shallots/ Small Onion, slited
- Oil
Method
In a medium size sauce pan put cleaned and washed chana dal with water and cook for 10 to 15 minutes. Once the dal is half cooked add chopped onion, garlic, green chilli and ridge gourd. Combine well, cover and cook for 2 minutes. Open and add salt, red chilli powder and turmeric powder, mix well cover and cook until the ridge gourd is cooked. Add salt in-between and stir well. once the water evaporates and everything cookes well, remove from flame and keep it aside. In a small pan add little oil and splutter mustard seeds, add sliced shallots and fry, add cumin seeds, dry red chilli and curry leaves fry till shallots become brown and crispy. Pour this over the kootu and mix well. Serve this with warm rice or roti.
NB: If you want can add some crushed coconut also, it gives deferent and nice taste. Enjoy cooking.
