Wheat Paniyaram, its easy and instant paniyaram. Its good to have little warm, have added rava/sooji along with wheat, if you want can add little rice flour too. If you want to make it little more colorful then add some grated jaggery, sliced capsicum etc. Here is simple recipe for you all to try.
- Wheat Flour / Atta 1 cup
- Rava / Sooji 1/4 cup
- Curd / Yogurt 1/2 cup
- Salt
- Water 1 cup
- Eno Salt 1 tsp
- Oil
- Cumin Seeds 1 tsp
- Mustard Seeds 1/4 tsp
- Onion 1 medium size, finely chopped
- Green Chili 2, finely chopped
- Ginger a small piece, chopped
- Curry Leaves 2 sprigs, finely chopped
Take a medium size glass / steel bowl and add wheat flour, rava, curd and salt, just mix everything together. Now add water slowly to make a thick batter.
Heat a nonstick pan with oil and crackle mustard seeds , add cumin seeds and fry for few seconds. Once its release aroma add chopped onion, ginger, green chili and curry leaves and saute for few seconds.
Pour this over the batter and mix well. Now add eno salt and mix everything well. Keep it aside for 15 to 20 minutes.
Heat paniyaram pan with oil. Pour some batter in and fry till the bottom cooked and crisp up. Flip over and cook. Remove and serve with your favorite chutney.
