Refreshing and lightly sweet Mango Raita, its very easy to make and deferent from other raita. It goes well with vegetable rice, pulav, egg rice and roti. Here is recipe for you all to try.
- Curd / Yogurt 1 cup (full cream)
- Ripe Mango 1, Cut into medium cubes
- Green Chili 1 chopped finely
- Sugar 1 tsp
- Mustard Seeds 1/2 tsp
- Dry Red Chili 2 nos
- Fenugreek Powder 1/4 tsp
- Oil
- Coriander Leaves few chopped
Method
Take a medium size glass bowl and add 1 cup curd and 1 tsp of sugar. Whisk well with a spoon and mix until the sugar dissolves. Now add the diced mango cubes in it and combine well.
Take a nonstick pan and heat 1 tbsp of oil on medium flame. Once the oil is hot add mustard seeds, fry them until it crackle. Now add dry red chili and 1/4 tsp of fenugreek seed powder and fry them on low flame.
Now pour this into the mango raita and combine well. Now sprinkle chopped coriander leaves and serve chilled or room temperature.
NB: if you dont like fenugreek / methi powder in it can omit that. You can add cumin seed powder instead. Enjoy cooking.
