Dates Balls Relish, its simple, easy and delicious pudding. It has good flavoures from dates and milk, when you bite the dates balls you will get crunchy effects then the soft textured pudding its awesome. Im sure your guests will relish this simple pudding. Here is recipe for you all to try.

Ingredients

For the date balls
  • Dates 1 cup, remove seeds and cut into small pieces
  • Butter 1 to 2 tbsp
  • Almond 2 tbsp, sliced
  • Cashew Nuts 2 tbsp
  • Cornflakes few crushed or Rice Cereals
  • Nutmeg Powder a pinch
For the Pudding
  • Dates 20 nos, remove seeds and soak in luke warm water for 20 to 30 minutes
  • Condensed Milk 1 tin
  • Milk 2 1/2 cup, full cream
  • Vanila Essence 1 tsp
  • Gelatine 10gm
Method

Take a medium size fry pan and heat on medium flame, add 2 tbsp of butter, once its melts add dates pieces and nuts, fry until nuts become crispy. Remove from flame and add crushed cornflakes or rice cereals and a pinch of nutmeg powder, combine everything well. Once it cool down a bit make few small balls out it. Keep it aside the rest of the mixture.

Take medium size sauce pan and heat on medium flame with 2 1/2 cup milk and condensed milk whisk well and boil until bubbles starts coming. Mean while grind the soaked dates and mix well this with milk and remove from fire and keep it aside. Add vanilla essence now and combine everything well. Mix gelatin in luke warm water and add this into the milk dates mix and mix well. Pour this into the pudding trey or in small glass bowls and keep it in the fridge to get set. After 2 to 3 hours open and add dates balls and remaining nuts dates mix on top of the pudding and garnish well. Best to make overnight and serve next day.

NB: Instead of gelatin you can use china grass too for this recipe. If you feel the sugar is less then add some sugar accordingly. I didn't use extra sugar as I was satisfied with condensed milk sweetness. When you make dates balls can reduce the size a bit, i made little bigger balls to get a good photo. Enjoy cooking..
