Quinoa Fried Rice Style

Quinoa is a grain crop that is grown for its edible seeds. Its one of the world’s most popular health foods and its also called as 'mother of all grains'.

Quinoa is gluten-free, high in protein and one of the few plant foods that contain all nine essential amino acids.It is also high in fiber, magnesium, B-vitamins, iron, potassium, calcium, phosphorus, vitamin E and various beneficial antioxidants.

It has been consumed for thousands of years in South America, although it only became trendy and reached “superfood status” a few years ago. There are three main types: white, red and black.

So try to include this grain in your diet whenever possible. Here is simple and tasty recipe for Quinoa fried rice style.

  • Quinoa 2 cup
  • Garlic Cloves 4 nos, chopped
  • Ginger 1 small piece, chopped
  • Onion 1 medium size, chopped
  • Red Chilli Flakes 1/4 tsp
  • Mushroom 200gm, chopped
  • Carrot 1 medium size, diced
  • Sweet Corn 1/2 cup, frozen
  • Green Peas 1/2 cup, frozen
  • Pepper Powder 1/4 tsp
  • Salt
  • Eggs 2 nos, fried and chopped
  • Soy Sauce 2 tbsp
  • Spring Onion few chopped
  • Oil

Heat a medium size sauce pan with 4 cups of water on medium flame, once bubble starts coming add cleaned and rinsed quinoa, cover and cook until done and water evaporates completely. Once it ready keep it aside.

Take a large skillet over medium high heat and add oil, once its hot add chopped garlic and ginger and saute for few minutes. Add carrots and mushrooms and cook for 4 to 6 minutes until veggies get cooked. Please stir in-between, no need to cover and cook. Now add green peas and sweet corn and combine everything well and cook for few more minutes. Add red chili flakes and 2 tbsp of soy sauce and mix well. Now add cooked quinoa and combine everything well. Add pinch of salt and pepper powder and mix everything well. Now add chopped fried egg slices and chopped spring onion and combine everything well. Serve warm. 

NB: Please take care of salt because soy sauce has salt in it. You can add cooked chicken also in this instead of veggies. With above measurement you can serve for 4 people. Enjoy cooking..
