Bean salad, composed of various beans, its colourful, keeps well and is full of flavour without being too spicy.
Consuming beans adds significant amounts of fiber and soluble fiber to a diet, soluble fiber can help lower blood cholesterol. Beans are also high in protein, complex carbohydrates and iron.
- Onion 1 medium finely chopped
- Green Capsicum 1 cut into small cubes
- Lemon juice 3 tbsp
- Cumin Powder 1 tbsp
- Balsamic Vinegar 1 1/2 tbsp
- Coriander Leaves 3 tbsp
- Olive Oil 1/4 cup
- Garbenzo Beans(white chick peas) 1 cup(cooked or canned one)
- Kidney Beans 1 cup (cooked or canned one)
- Black Beans 1 cup(cooked or canned one)
- Pepper Powder 1/4 tsp
- Salt a pinch
Method
Cut veggies and keep it aside. Drain the beans and places them in a big bowl.
In a smaller bowl we can prepare a dressing for this salad, mix the lemon juice,balsamic vinegar, olive oil, pepper powder, cumin powder and salt and whisk well.
Add chopped capsicum and onion into the beans mixture, pour the salad dressing over beans and mix well.

Cover and refrigerate for 2 hours and serve.
Its a great salad for lunches at work and for the kids as well.
Note: I have used balsamic vinegar if you don't have that you can substitute with Apple Cedar vinegar or normal vinegar. If you want to avoid Vinegar and add little more lemon juice that also tastes good. Enjoy this protein rich salad.
