Carrot Pudding

Carrot Pudding, its simple and easy desert to make for this festive season. Normally we all make carrot halwa so thought of trying something deferent. Its very soft, delicious and rich pudding and definitely not a diet food. I am sure your guests and kids will enjoy this pudding. So here is recipe for you all to try.   • Carrot 3 medium size, grated
  • Milk( full cream) 2 cup + 1/4 cup
  • Condensed Milk 1/2 tin
  • Sugar 3 to 4 tbsp
  • China Grass 5gm OR Gelatin 2 tbsp
  • Vanila Essence 3 drops
  • Grated Carrot few for garnishing
  • Pista few for garnishing
  • Water 

Soak the china grass in 1 cup of water for 30 minutes. Take a medium size sauce pan with half cup of water and add grated carrot boil for 8 to 10 minutes on medium low flame. Keep it aside to cool down, then blend well with 1/4 cup of milk. 

In another pan boil the soaked china grass with soaked water until it melts completely. Boil 2 cups of milk in another pan. Add sugar, condensed milk, vanilla essence and blended carrot, stir well for 2 minutes. Add the melted boiled china grass to the milk mix, stir well for 2 to 3 minutes and switch off the flame. 

Transfer it in to a serving dish , garnish with few of grated carrots and sliced pista. Keep in the refrigerator for 4 to 5 hours. Serve chilled.

NB: Sugar please adjust according to your taste. Instead of pista you can use almond slices or cherry slices for garnishing.
