Wash and rinse spinach / palak well in enough water. Drain and remove water completely. Chop and keep it aside.

Take a bowl and add sliced onion, green chili, coriander leaves, ginger garlic paste, turmeric powder, red chili powder and garam masala powder. Now add chopped spinach, ajwain seeds and salt mix well. Let it rest for 15 to 20 minutes.

Once the above mix release water add gram flour and rice flour and combine the mix well. Check the salt now and add if need.

Heat a kadai with enough oil to fry the pakodas. When the oil is hot enough, drop the mixture in small quantities. Keep stiring and fry until golden colour. Drain the fried pakodas into a kitchen tissue. Its ready to serve now. Serve warm pakodas with hot tea.

NB: Here I used baby spinach for making pakoda, you can use the normal big spinach leaves. Green chili and red chili powder you can add according to your taste. If you dont have Ajwain seeds you can add Fennel seeds instead or asafoetida powder. Enjoy cooking.
