Ingredients
- Beetroots 2 medium size, peeled and grated
- Ghee 1 tblspn + 2 tblspn + 2 tsp
- Milk 1 cup
- Sugar 1/2 cup to 3/4 cup
- Cashews 1/4 cup
- Almonds few, sliced
- Raisins few
- Cardamom powder 1/2 tsp
Method
Heat 1 tbsp of ghee in a pressure cooker. Add grated beetroots and saute till raw smell leaves from it.
Now add in milk and pressure cook for 2 whistle. Simmer the flame and cook for 8 to 10 more mins. Now turn off the heat and let the steam go by itself and cool down a bit.
Now heat 2 tblspn ghee in a pan, add in cashew and fry till golden, now add sliced almonds and fry for few minutes, now add in sultanas and saute for a min. Remove the nuts in to a bowl.
In the same ghee, add the cooked beetroots along with the milk. Saute on high heat till the milk dries up.
Now add in sugar and mix well. Keep cooking till the mix get thick. Keep stiring , it will starts to leave the sides.
Now add in a tsp of ghee and mix well. Add another tsp of ghee and cook till it leaves the sides of the pan.
Add in the fried nuts and cardamom powder. Mix well. You can spread on a greased steel plate cut and serve or in any plastic mould which you like.
NB: I just grated the beetroot in big sizes because i want some pieces to bite while eating. I know in halwa you dont like pieces so grate beetroot in small size then cook it. So you get soft halwa. With above ingredients you get only one medium size bowl halwa only so increase quantity if you want more halwa. Enjoy cooking..
