Egg Fried Rice

Egg fried rice is a very simple an popular Indo Chinese recipe. Fried rice is a dish of steamed rice stir fried in a wok, often mixed with other ingredients such as eggs, vegetables and meat. Here is a quick and easy recipe. 



Ingredients 
  • Basmati Rice 1 1/2 cup 
  • Eggs 3 ( scrambled) 
  • Carrot 1/2 cup finely chopped 
  • Onion 1 big chopped
  • Spring onion 1 cup chopped 
  • Capsicum 1/2 cup 
  • Ginger 1 tbsp ( minced) 
  • Garlic. 1 tbsp ( minced) 
  • Pepper powder 2 tsp 
  • Soy Sauce. 2 tsp 
  • Tomato chilli sauce 2-3 tsp 
  • Salt to taste.  
  • Oil. 2 tbsp 

Method

Cook rice adding salt into it, until the rice is 90% cooked.

Heat 2 tbsp oil in a heavy bottomed kadai or wok, add minced ginger and garlic, sauté a while, add chopped onions and fry for few seconds. Add chopped carrots, spring onion and capsicum, cover and cook for two minutes. Add soya sauce and chilli tomato sauce, cook for few seconds, add scrambled egg stir well. 

Add pepper powder and salt to taste, adjust the salt since soy sauce has salt in it. Add cooked rice and stir well. Cook for 2 minutes on medium flame. Check the salt and adjust it. Sprinkle chopped spring onion and serve hot with any manchurian Sauce.
