Thai Mango Salad

#2 Valentine's Special.

The traditional Thai mango salad is sweet and spicy, filled with finely chopped pork, dried shrimp, peanuts and chilies. Here i didn’t use pork and dried shrimp. I have mixed traditional with few creative ideas of my own. A special salad for Valentine's Day dinner.

  • Peanuts 1/2 cup chopped 
  • Mangoes 2 firm Julienned
  • Sweet red pepper 1 Julienned
  • Carrots 2 julienned
  • Mixed greens 2 cups
  • Onions 1/2 cup thinly sliced
  • Fresh Coriander leaves 2 tbsp coarsely chopped
  • Vegetable oil 1/4 cup
  • Grated lime rind 1 tsp
  • Lime juice 2 tbsp
  • Fish sauce or Soy sauce 1 tbsp
  • Brown Sugar 1 tbsp
  • Hot red pepper crushed 1 tsp
  • Salt and pepper 1/4 tsp each


In skillet, toast peanuts over medium heat until fragrant and dark golden, about 8 minutes. Set aside.

In large bowl, whisk together oil, lime rind and juice, fish sauce or soy sauce, brown sugar, crushed hot pepper, salt and pepper. Add mangoes. red pepper, carrots, mixed greens, onions and coriander leaves, toss to coat. 

Serve sprinkled with crushed peanuts.
