Aval upuma, a very quick, delicious breakfast or evening snack made in few minutes but fills your tummy to the full.
- Rice Flakes / Aval 2 cups
- Onion 1 Large (finely chopped)
- Green chillies 3 or to your spice tolerance(slit lengthwise)
- Peanuts 1/4 cup
- Asafoetida Powder 1/2 tsp
- Mustard Seeds 1 tsp
- Turmeric Powder 1/2 tsp
- Curry Leaves few
- Grated coconut 1/4 cup (optional)
- Cooking oil 2 tsp
- Dry red Chilli 2 now
- Ghee 1/4 tsp
- Salt to taste
Wash the rice flakes / aval in cold water well and let it drain for 10 minutes.
Heat oil in a pan, add mustard seeds and asafoetida, when the seeds splutter add the peanuts and stir until roasted.
Then add dry red chilli and few curry leaves mix well.
Add the chopped onions, green chillies and salt to taste.
Once onions turns to translucent, add turmeric powder and mix until combined.
Add the drained rice flakes/ aval and stir to combine.Put ghee on top.
Close with the lid and reduce the heat to low. Keep this for couple of minutes. Open and add grated coconut and few more curry leaves and stir well, cover and keep for a minute.
Open the lid and combine all well. Switch of the flame, serve and enjoy.
