Rajma

Red Kidney beans are known as Rajma in India and they form an important part of a vegetarian diet due to their excellent protein content. Health benefits of kidney beans are prevents diabetes, lowers cholesterol levels, prevents hypertension, helps lose weight and strengthens the immune system.

Rajma masala is one of the best Indian recipes in North Indian cuisine. Red kidney beans curry, prepared in a spiced onion tomato base.





Ingredients
  • Rajma 1/3 cup
  • Onion(medium) 2 nos(finely chopped)
  • Tomato Puree 1 cup
  • Ginger Garlic Paste 1 tsp
  • Coriander Powder 2 tsp
  • Chilli Powder 1 tsp
  • Turmeric Powder 1/4 tsp
  • Garam Masala Powder 1 tsp
  • Oil 2 tbsp
  • Cumin / Jeera seeds 1 tsp
  • Salt as required

Method

Soak rajma (kidney beans) overnight.

Pressure cook rajma with a little salt and turmeric powder till soft (5 - 6 whistles).

Blend tomatoes and keep it aside.

Heat oil in a sauce pan and add jeera / cumin seeds, when they sizzle, add finely chopped onions. Saute onions till they turn golden brown.

Add ginger garlic-paste and saute for some time.

Add tomato puree, all the spice powder and cook till oil separates.

Now add the cooked rajma along with little water. Add salt needed, keep in low flame cook for a few minutes until everything combine well with the masala. Mash a few rajma with the back of the ladle for gravy to thicken.

Garnish with coriander leaves. Serve hot with plain rice or as a side dish for chapati.
