Shahi Mushroom, its delicious and spicy gravy with mushroom. The specialty is shahi garam masala, richness of cashew paste and cream comparing to other kuruma recipes. Serve this delicious curry with Roti or warm Rice. Here is recipe for you all to try.
- Button Mushroom 250gm
- Ghee 2 tbsp
- Butter 1/2 tbsp
- Salt
For the Shahi Garam Masala
- Shahi Jeera / Zeera 1 tbsp
- Cumin Seeds 1/2 tbsp
- Cinnamon Sticks 1 medium stick
- Black Pepper Cornes 1 tbsp
- Dry Ginger 1 medium size
- Cardamom 1, black one
- Nutmeg a small piece
- Cloves 3 to 4
- Cardamom 3 nos, green one
- Pather ka phool little bit
- Coriander Seeds 1/2 tbsp
- Nutmeg & Mace / Javitri a small piece
For the Gravy
- Ghee 1 tbsp
- Cumin Seeds 1/2 tsp
- Bay Leaf 1
- Ginger - Garlic Paste 1 tbsp
- Onion Puree 2 tbsp
- Green Chili 3 nos, crushed
- Turmeric Powder 1 tsp
- Cumin Powder 1 tsp
- Coriander Powder 1 tsp
- Chilli Powder 1 tsp
- Tomato Puree 250gm
- Cashew Nut Paste 2 tbsp
- Cream 1 1/2 tbsp
- Sugar a pinch
- Salt
- Water
- Lime Juice 1/2 tbsp
Method
Take a pan and heat on medium flame, add ghee once its melt shallow fry button mushroom, salt and butter. Transfer the shallow fried mushrooms into a bowl and keep aside.
Will make shahi garam masala now. In a pan, dry all the ingredients under 'for the shahi garam masala' for 2-3 minutes. Once it cool down a bit put it in a blender and make it a fine powder.
Take a pan add ghee, bay leaf, cumin seeds, coriander powder, red chili powder and salt for taste. Add little water and de-glaze them. Now add tomato puree and a little sugar and saute well.
Now add cashew nut paste and saute for 1 minute, add shahi garam masala, cream and lime juice. Combine everything well. Check salt and add accordingly.
Add shallow fried mushroom and combine everything well. Keep flame on low and its simmer for 5 minutes.
NB: I didn't had pather ka phool so couldn't add that. Green chili and red chili powder please adjust according to your taste. Enjoy cooking..
