Grape Ice Cream with Mint


Home made grape ice cream, easy, delicious and creamy ice cream with grapes. I got some fresh grapes this time I mentioned in my previous grape recipes. So i could make few dishes with it. I tried grape ice cream too. In store I have never seen grape ice cream. Usually grapes sorbet and grapes lollipops are there. Anyway I just tried and it came out almost there without an ice cream maker. So here is recipe for you all to try.

  • Grape Juice / Concentrate 400 ml, frozen
  • Sugar 1/2 cup
  • Milk 2 cups, full cream
  • Evaporated Milk 1 tin
  • Fresh Cream 1/2 cup
  • Pudina Leaves 1/4 cup, finely chopped

I used home made grape concentrate for this recipe. So first we can make grape concentrate. 

Wash and rinse grapes in the running water to remove dirt and pesticides from the skin. Remove stem and keep it aside.

Heat a medium size sauce pan with 1 1/2 cup water on medium flame. Add 1/2 cup sugar and 2 cups grapes in it and just boil together. Once its boiled remove from the flame and keep it aside to cool down. 

Now take a blender and add this grapes mix in it and blend until smooth. Place a large sieve or strainer over a large bowl and pour this juice over it. Press the pulp gently to get the maximum juice out of it. Add the 1tbsp of lemon juice in it and mix well. Now pour this in a ziplock bag or plastic container and keep it in the freezer overnight or for 12 hours. You can use store bought grape concentrate also for this recipe, then add sugar accordingly. 

Next day please take out juice concentrate from freezer and keep it outside for sometime, then add 1/4 cup chopped mint leaves, stir well and keep it aside. 

In a large bowl combine fresh cream, milk, evaporated milk and 1/2 cup sugar stir well until sugar dissolve. 

If you have a ice cream maker at home then pour this milk mixture and grape concentrate mixture in it and make according to manufactures instructions. Here I dont have an ice cream maker so i just put grape concentrate mix and milk mix in a processor and just processed for 2 minutes then pour this mixture into a plastic container and keep in the freezer for overnight and serve next day.  While serving you can add small chocolate stick or flakes stick chocolates along with it. 

NB: Sugar please adjust according to your taste. If you have an ice cream maker you get good texture, but this also almost there so dont worry do try. Enjoy cooking..
