Baked Salmon With Pickled Cucumber and Mint

Simple oven baked recipe for a deferent way to cook Salmon. Its great for a dinner meal. So try this recipe.

  • Salmon Fillet 500 to 800 gm, with skin
  • Olive Oil 
  • Salt 
  • Black Pepper Powder
  • Lemon Juice 1 tbsp
  • Fresh Mint few chopped
For the pickle
  • Cucumber 1, shaved into ribbons or cut into length wise
  • Red Chilli 1 small, sliced
  • Water 1/4 cup
  • Vinegar 2 tbsp, plain one or rice vinegar
  • Salt

Rinse salmon fillet with water, drain water well and keep it aside. Now marinate salmon fillet with olive oil, salt, black pepper, lemon juice and few chopped mints. Keep it aside for 20 minutes.
Pre heat oven on 200 degree C for 8 minutes.

Now place Salmon on a lined or greased baking tray. Bake for 15 to 20 minutes on 180 degree C. Check its cooked properly, please dont make it too dry. Remove and cool.

Combine all the ingredients mentioned under 'for the pickle' except the salt and leave it for 15 minutes. Season with salt and serve.

Place salmon on a plate top with cucumber pickle, sesame seeds and few chopped mint leaves. Garnish with lime.
