Souffle Omelette With Strawberries

Souffle Omelette With Strawberries, its a sweet omelette with apricot jam and strawberries. Its a great brunch dish. Seeing the photo you may think its a desert but actually not. The texture is light and fluffy and one omelette is enough for two people. So here is simple and easy recipe for you all to try.

  • Eggs 4 nos
  • Caster Sugar / Powdered Sugar 4 to 6 tbsp
  • Apricot Jam / Strawberry Jam 2 tbsp
  • Vanila Essence 1/4 tsp
  • Salt a pinch
  • Strawberry Slices 1 cup
  • Butter 1 to 2 tbsp

Separate egg whites and yolks and keep it aside. Please use room temperature eggs and butter. Take a medium size bowl and add egg whites and caster sugar .Whisk them until they hold stiff peaks. With a rubber spatula fold the egg whites into the yolk and combine everything well. Add a pinch of salt and vanilla essence now. Rotate the bowl and mix everything well. Heat a 23-25 cm frying pan with an oven proof handle. Melt 1 tbsp of butter in the pan to cover the bottom generously. Tilt the pan to coat the bottom and sides. Pour the egg mixture. Reduce the heat to low. Cook without stir for 4 to 5 minutes until the omelets is puffy and set around the edges but still soft in the centre.

Meanwhile put on the oven to 180 degree C for 4 minutes.

Transfer the pan into the oven and bake for 3 to 4 minutes until the top is set and lightly browned.

Remove from oven and transfer into a plate and spread apricot jam on top evenly. Layer thinly sliced strawberries and fold the omelete. After folding sprinkle some icing sugar and garnish with some starwberry slices. Enjoy..

NB: If you don't want to keep in the oven then cover and cook the omelette in the medium low flame until top is cooked. If your eggs are very big then use only 3 eggs. Enjoy cooking..
