Quinoa in Italian style, healthy and delicious one pot meal. This is another best way to eat quinoa with Italian spices. If you don't want to add sausages can add some vegetables like carrots, zucchini etc. Here is recipe for you all to try.

NB: To cook quinoa (Heat a medium size sauce pan with 4 cups of water on medium flame, once bubble starts coming add cleaned and rinsed quinoa, cover and cook until done and water evaporates completely. Once it ready keep it aside.)
- Quinoa 2 cups, cooked
- Sausage 200gm, sliced
- Garlic Cloves 5 nos, crushed
- Sun-dried Tomatoes 3/4 cup
- Baby Spinach 1 cup
- Olive Oil 2 tbsp
- Italian Spices 2 tsp
- Grated Parmesan Cheese 2 tbsp
- Pepper Powder
Rinse sausages with water and cut thin slices. Season sliced sausages with salt and pepper and keep it aside.
Heat a fry pan on medium heat with olive oil and shallow fry the sausage slices. Remove fried sausages into a plate and in the same oil add crushed garlic and saute for few seconds. Now add sun dried tomatoes and saute for few seconds. Add italian spices and saute for few seconds. Add fried sausage slices and baby spinach and saute for 1 to 2 minutes. Now add cooked quinoa and combine everything well. Check salt if need add accordingly. Sprinkle little water and cover and cook on low flame for 2 minutes. Open and mix everything well. Add grated parmesan cheese while serving. If you dont want cheese then omit that. Enjoy..
