Vegetable Kuruma, its an easy to make and tasty recipe. You can add the vegetables according to your choice, I have used carrots, potatoes and green peas. Here is recipe for you all to try..
- Potatoes 2nos, medium size
- Carrot 1, medium size
- Fresh Green Peas 1/2 cup, soaked for 10 minute
- Turmeric Powder a pinch
- Salt
To Grind
- Coconut 1/2 cup, grated
- Green Chili 2 nos
- Ginger 1 piece
- Garlic Cloves 4 nos
- Cinnamon 1 medium piece
- Cloves 4 - 6
- Cardamom 1
- Fennel Seeds 1 tsp
- Poppy Seeds 1 tsp
- Cashews 6 - 8 nos
- Mint / Pudhina Leaves few
To Saute
- Cumin Seeds 1/2 tsp
- Curry Leaves few
- Bay Leaf 2 nos
- Onion 2 Medium, chopped
- Tomato 1 big , chopped
- Coriander Powder 2 1/2 tsp
- Red Chilli Powder 1 tsp
- Turmeric Powder 1/4 tsp
- Garam Masala Powder 1/4 tsp
- Cumin Powder 1/2 tsp
- Oil
Method
Chop all the vegetables in to medium size and put them in a pressure cooker. Add little water, turmeric powder a pinch and salt. Cook for 2 whistles. Please note that you should not add onion and tamoteos . Mean while put the ingredients under 'To Grind' in a blender with some water and grind to a fine paste. Keep this aside.
Take a medium size sauce pan add little oil and add cumin seeds once its leaves aroma add bay leaf and curry leaves saute for few seconds. Add in chopped onions and saute until soft. Add chopped tomatoes and saute until soft. Now we can add the ground paste and saute for few seconds. Add red chili powder, turmeric powder, coriander powder, garam masala powder and cumin powder and saute well. Add cooked vegetables now, mix everything well. Check salt and water now, add if required. Boil for 5 to 6 minutes in medium flame. Put off flame and serve it with chapathi , poori or dosa.
NB: Green chili and red chili powder add according to your spice level, its mild spice curry. Enjoy cooking..
