Spicy vegetable bread pola,as you all knew pola is a malabar delicacy. I already shared some other varieties of pola. So today I am sharing bread pola stuffed with spicy vegetable masala. There are deferent ways of making this recipe. Here is my version of bread pola recipe for you all to try. Its good to serve as an evening snacks or you can pack for kids lunch box or to pack for picnic snacks. Hope you all will like this.

- Bread Slices Brown / White 10 to 12 pieces
- Potatoes 2 nos, medium size
- Carrot 1, medium size
- Onion 1 big, chopped
- Ginger small piece, chopped
- Garlic 3 cloves , chopped
- Green chili 2 nos, chopped
- Coriander Leaves few, chopped
- Cream Cheese, 2 slices
- Turmeric Powder a pinch
- Garam Masala Powder 1/2 tsp
- Pepper Powder 1/2 tsp
- Salt
- Ghee 1 to 2 tbsp
- Oil 1 tbsp
- Bread slices 10 to 12 numbres
- Egg 4 nos beatened
Method
Clean and boil potatoes and carrot, once its 3/4 th cooked remove from flame and keep it to cool down. Once its cools down cut into small cubes and keep it aside. Take a pan heat it on medium low flame and put oil. Once the oil is hot add chopped onions, sprinkle a bit of salt and saute until its translucent. Now add chopped ginger and garlic, saute until raw smell goes off. Add green chili and saute for few seconds. Now add garam masala powder, turmeric powder and 1/4 tsp of pepper powder and salt, saute for few seconds. Add boiled and cubed potatoes and carrots. Combine everything well. Add cream cheese now and mix well. Check salt if need add accordingly. Add a pinch of garam masala powder and chopped coriander leaves, combine everything well. Put off the flame and keep it aside, our filling is ready now for the bread pola.
Take 10 slices of bread and remove the brown edges of the bread and cut into 2 pieces or four pieces and keep it aside. Take a medium size bowl and add eggs, pepper powder and salt, beat well and keep it aside. Take a round medium size sauce pan or fry pan and keep it on a low flame. Add 1 tbsp of ghee once its melt swirl the pan nicely. Dip the bread slices into the beaten egg and arrange it into the pan. Please take care while arranging the bread slices, there shouldn't be any gapes between the bread slices. Now evenly spread the vegetable masala over the bread layer. Now dip the bread slices into the beaten egg and arrange it on the top of the masala, bread slices should cover the masala completely. Now pour over remaining egg mix on top and drizzle 1/2 tbsp of ghee. Cover and keep it on the medium low flame for 4 to 5 minutes . Please take care flame else the bottom will burn immediately, keep it on low flame. Open the lid after 5 minutes and cover with a plate and gently flip it over, the bottom bread layer will be on the top of the plate now. Slide it into the pan using flat spatula and cook covered on low flame for 6 to 8 minutes until it turn golden brown colour. After 6 minutes or once its cooked completely put off flame and remove the dish from the flame and transfer into a plate. Once it cool down a bit cut into slices. Serve warm with tomatoe sauce or any other sauce which you like.
NB: I have used brown bread slices for this recipe. If you want can fill chicken masala or fish masala for this bread pola. You can add cooked french beans or cooked green peas also into this. Please adjust spiciness according to your taste. If you want to avoid richness and then omit the cream cheese. If you want can add chopped curry leaves also. You can bake them in oven too.
