Pineapple Kesari With Pineapple Sauce and Ice Cream

Pineapple Kesari / Pineapple Sheera, Its a popular desert  in the state of Karnataka, South India. Its delicacy to serve during wedding or any other auspicious occasions. Here I tried a fusion version of serving this kesari, made a pineapple sauce also. We liked this combination. Im sure you all will like this. So here is recipe for you all  to try. 





Ingredients


  • Semolina / Rava 1 cup
  • Pineapple Cubes 1 cup (small cubes)
  • Sugar 1/2 cup
  • Water 2 1/2 to 3 cups
  • Cardamom Powder 1/4 tsp
  • Cashew Nuts 2 tbsp
  • Raisins 1 tbsp
  • Saffron Threads few
  • Ghee 2 to 3 tbsp

Method

Dry roast semolina / rava and keep it aside, let it cool down. Crush the pineapple cubes and keep it aside. In a pan add 1 tbsp of ghee and roast cashew nuts and raisins until crispy, keep this aside. In the same pan add some more ghee and add crushed pineapple and saute for 2 to 3 minutes. Now add sugar and saute for few seconds, add 2 1/2 cup water and let it boil. Add saffron threads now. Once water starts boiling slowly add semolina in it and stir well. Add cardamom powder and combine everything well. Keep it in the low flame. cover and cook for 2 to 4 minutes. Pineapple kesari is ready to serve now. Here i served warm pineapple kesari with pineapple sauce and vanilla ice cream. Its an awsome combination. 

NB: If you want your kesari to be smooth then use pineapple puree instead of crushed once, i wanted to bite in-between the pieces so used crushed pineapple for this recipe.

To Make Pineapple Sauce

Ingrediens
  • Pineapple Cubes 1 cup, small cubes
  • Cardamom Powder a pinch
  • Nutmeg Powder a pinch
  • Sugar 3 tbsp
  • Cornflour 2 to 3 tbsp
  • Water 1/4 to 1/2 cup
  • Butter 
Method

Take a pan and heat on medium flame. Add butter, once its melts saute pineapple pieces for 3 minutes. Now add sugar and saute for few seconds. Cornflour mix in water and add this and combine well. Add cardamom and nutmeg powder mix well. Check sugar if need add accordingly. Once its get a semi gravy consistency put off flame and keep it aside. 

Once its cool down a bit can serve with pineapple kesari. Take a plate and put pineapple kesari then pineapple sauce on top and side with vanilla ice cream. Enjoy this fusion desert. If you want more yellow color for this then add yellow food color. Enjoy cooking..
