To make the patties

Just clean the salmon fillet and make sure that all the bones removed in it. Now add all ingredients which mentioned under salmon patties except oil and 1 cup bread crumbs into a food processor and grind for few seconds. Do not over grind or the salmon pieces will become pasty.

Now shape into medium size patties and keep it in the refrigerator for 30 minutes. Take 1 cup bread crumbs into a flat plate and lightly dust the patties evenly on both sides .

Heat oil in a pan and keep on medium flame, once the pan is hot shallow fry the patties till golden brown on both sides.

To make the mayonnaise

Cut the soaked chillies into small pieces.

Blend the egg yolks, lemon juice, garlic and salt. As the yolks start to cream, slowly add the oil , till you get a creamy, mayo like consistency. Add the chillies and just grind for a second. Taste and add salt , more lemon juice if its necessary. Blend for few more seconds and the mayo is ready.

To make pickled onions

Place the sliced onions in a bowl. Cover with vinegar and a pinch of salt. Keep it for at least 30 minutes and squeezed out all the vinegar before use.

To Assemble

Cut the burger buns into half, spread mayonnaise on one side and tomatoe ketch up on the other.

Place 2-3 lettuce leaves on one side followed by onions and then place the salmon patty on top . Cover with the other piece and serve. Enjoy this home made salmon burger for dinner or for evening as a snack.

NB: If you dont have a food processor, put them in the blender and press pulse for few times and mix everything or you can chop the salmon into very small pieces and mix everything together and make patties. if you dont want to shallow fry the patties then you can grill / barbecue the patties. The salmon mixture can be prepared in bulk and frozen for future use.

Mayonnaise also you can make more quantity and store in airtight container in the refrigerator.

You can make small patties and use slider buns for an evening party starter. Enjoy cooking..
