Kai Pola / Plantain Cake

Kai Pola / Plantain Cake, very famous malabar dish. Its basically a sweet cake and its filled with egg and plantains. Plantains ( large bananas ) are very famous in Kerala and it has a major part in Keralits diet. I got this recipe from a friend who is my school buddy. Its very easy to make just take 30 to 40 minutes altogether. So here is recipe for you all to try.




Ingredients
  • Plantain 3 nos, medium size
  • Eggs 5 or 6
  • Sugar 6 to 8 tbsp
  • Cardamom Powder 1 tsp
  • Cashew nut chopped few 2 tbsp
  • Raisins few 1 tbsp
  • All Purpose Flour / Maida 1 tbsp
  • Ghee
Method

Peel and cut Plantain into small pieces and keep it aside. Heat a pan on medium flame and add 1 tsp of ghee and fry the chopped plantain until it turns colour and light golden brown. Remove from the pan and keep it for cool down. In the same pan add 1 1/2 tsp of ghee and roast the chopped cashew nuts and raisins. Keep it aside.

In a bowl add 6 eggs , sugar and cardamom powder whisk well. Now sprinkle some all purpose flour into the fried plantain add into the egg mix and combine well. Sprinkle some all purpose flour into roasted cashew and raisins and mix well add this also into the egg mix and combine well. 

Heat one non stick sauce pan or pressure cooker with 1 1/2 tsp of ghee on medium heat. Pour this egg plantain mix into this pot close the lid , if its pressure cooker then no need to keep whistle. Cook on low flame for 15 to 20 minutes. Insert tooth pick and ensure it comes out clean. If its pressure cooker then cook until steam comes out through the nozzle. Once its cool down then transfer into a plate and serve. Enjoy with hot tea.

NB: If you want can bake this in the oven too, but please take care no to burn. Once its cooked and ready i just kept in the oven on baking mode for 2 minutes just to get brown colour on the top portion. Egg and sugar take according to your taste. Egg if you take 5 also its fine, thickness will be little less thats it. Instead of ghee you cn use oil too, but i prefer ghee. Enjoy cooking..
