Cracked Wheat Porridge (Gothambu Kanji)

#2 Gothambu Kanji

This is a very healthy and comforting dish. You can make this dish as breakfast or as supper. In malabar muslim families make this during ramadan to break their fast. Doctors suggest wheat porridge for diabetic patients as part of their menu. Its very light food. Here is recipe for you all to try.

  • Broken Wheat / Cracked Wheat 1/2 cup
  • Water 1 cup
  • Coconut Milk 1 cup thin one
  • Coconut Milk 1 cup thick one
  • Sugar 2 tsp
  • Salt
  • Shallots 4 nos, slited
  • Ghee 2 tsp

Pressure cook cracked wheat with 1 cup water and 1 cup thin coconut milk. Once its cooked and pressure goes open the lid and thick coconut milk and simmer on low flame. Add sugar and salt according to your taste. Mix well and transfer to a serving bowl. In a small add 2 tsp of ghee and roast the shallots. Pour over the kanji and serve hot. 

NB: You can dry roast nuts like almonds and cashew nuts and add in the kanji. You can adjust the consistency of this dish by adding more water or milk u to your taste. The above measurement will give a medium thick consistency.
