An easy - assembly dessert, will take 15 minutes to prepare. Normally you all make black forest cake and it take more time to make it. This one almost used similar ingredients as black forest cake and good thing is very easy to make. Here is recipe for you all to try.
- Double Cream 600ml
- Brandy 1 tbsp
- Icing Sugar 4 tbsp
- Frozen Berries 450gm, defrosted
- Chocolate Brownies 125 gm, crumbed into medium chunks
- Mini Meringues 16
- Milk and White Chocolate chips or any shape 20gm, optional
In a large bowl, whip the cream with the brandy and 2 tbsp of icing sugar until it just holds its shape. Spread evenly into a 2 ltr shallow serving dish and level it.
In a food processor, put half of the frozen berries with 2 tbsp of icing sugar and make a smooth puree.
Drizzle fruit puree over the cream layer. Dot the brownie pieces and 12 of the meringues over the fruit layer, sprinkle over defrosted berries. Add some crumbled meringues and some cream on top. Sprinkle some chocolate chips on top and serve. If you want chilled then keep it in the fridge for 30 minutes to 1 hour and serve.
NB: Instead of double cream you can use regular whipped cream. Mixed berries such as cherries, blue berries, black berries, strawberries and black currents. You can buy fresh berries and keep it in the freezer for overnight and use those once instead of of frozen packet. Meringues are crisp white cookies are easily available in the supermarkets.
