Cream of Leek and Potato Soup

Creamy Leek and Potato soup, its simple and delicious. Its perfect for dinner on winter time. Leek has pleasant, delicate and sweet flavour obtained from onion family. It contains anti oxidants, minerals and vitamins. So tried to include this vegetable in your diet. Here is recipe for you all to try.

  • Leeks 2 cups, white and tender green parts
  • Potatoes 1 cup, peeled and cut into medium cubes
  • Garlic 3 cloves, minced
  • Water 4 to 5 cups Or Chicken Stock 4 cups
  • Heavy cream 1/2 cup
  • Chives or parsley minced 1 tbsp
  • Salt
  • White Pepper or Black Pepper powder
  • Butter 

Heat a large sauce pan with 1 tbsp of butter on medium flame, once the butter melts add leeks and potatoes and saute well for 2 minutes, now add minced garlic and saute for 1 minute. Add salt and pepper stir well. Add water now, boil over high heat. Once its boil reduce heat into medium and cover partially and simmer for 20 to 30 minutes until the vegetables are tender. Check the salt and pepper, if need add accordingly. Now puree with hand blender. 

Pour this puree into the sauce pan and heat on low flame, add heavy cream and whisk well. Put off flame and serve on top with a dollop of cream and sprinkling of fresh chives or parsley. 

NB: If you are using chicken stock then add salt very less because chicken stock has salt in it. I used water only. Enjoy cooking.
