Bamboo Rice (Mulayari) Payasam

Bamboo rice is special, it is the rice taken from the Bamboo grains. Bamboo rice is rare variety rice, It flowers only once in 12 years. The nutritious value of bamboo rice is very remarkable. It is more healthy to have bamboo rice than the rice from paddy. Have got bamboo rice from my friend and tried this payasam. 






Ingredients

  • Bamboo Rice 2 cup
  • Jaggery 450 gm 
  • Cow Milk 1 ltr
  • Milk Maid half tin
  • Sabutana (just roast in ghee) 25 gm
  • Coconut milk (thick) 150 ml
  • Cashew nuts 2 tbsp
  • Raisins 1 tbsp
  • Ghee 3 tbsp
  • Cumin Powder 1/4 tsp
  • Dry Ginger Powder 1/4 tsp
  • Cardamom Powder 1/4 tsp
  • Salt a pinch

Method

Soak bamboo rice overnight.

Melt the jaggery along with water and filter it and keep aside.

Drain and cook rice with 1 cup of water (use pressure cooker 4 whistle)
In a heavy bottom deep sauce pan, boil milk add cooked bamboo rice and roasted sabutana cook on medium heat stirring frequently.

Add melted jaggery and combine well and cook for 3-4 minutes.

Add coconut milk and simmer on medium heat, add milk maid also during this time and mix well till the liquid get enough thickness.

Add Cardamom powder , ginger powder and cumin powder and gently mix it.

Switch off and add salt and mix well, let it stand on warm stove top for 30 minutes or so.


Heat ghee in a pan, roast cashew nuts and raisins, till nuts turn golden brown and raisins get plump. 

Garnish with roasted cashew nuts and raisins, serve warm.
