Strawberry Palada, As you all knew palada payasam is a delicacy from Kerala. Here I tried a fusion palada payasam with strawberries. Was thinking of adding some fruits in the palada and strawberries came into my mind and tried with that it came out well and loved the combination. So here is recipe for you all to try.
Ingredients
- Rice Ada 300gm
- Milk 2 ltrs
- Sugar 1 1/2 cup
- Condensed Milk 1/2 tin
- Water 2 cup
- Ghee 2 tbsp
- Cashew nuts 1/2 tbsp
- Raisins 1/2 tbsp
- Cardamom powder 1/4 tsp
Boil 2 cups of water, put rice ada in the boiled water and keep aside for 10 to 15 minutes. Drain the water and rinse well in plain water.
Take a medium size thick bottomed sauce pan and mix 1 cup of water and 1 litter milk and keep it to boil, once it starts boiling add the cleaned ada and cook well. Add rest of the milk and boil and keep on stirring. Once ada is cooked and archives a thick consistency, reduce the flame and add sugar slowly. Add cardamom powder and stir well and boil well for about 8 minutes. Add condensed milk and combine well and boil for 2 more minutes or until the desired consistency is achieved. Switch of the flame and add a pinch of salt and mix well. Heat a small pan with ghee roast cashew nuts and raisins and fry well and pour on top of the payasam and mix well. Keep this aside.
For Strawberry Sauce
- Strawberries 100 to 150 gm( fresh Once)
- Sugar 1/4 to 1/2 cup
- Ghee 1 tbsp
Method
Take a medium size fry pan and put on medium heat and add ghee. Once the ghee melts add chopped strawberries and saute for few seconds. Now add sugar and mix well. Once sugar melts and you get a sauce consistency put off the flame. I didn't mash the strawberries because i want to bite pieces in between. Keep it aside to cool a bit. Once its cools down a bit add prepared palada paysam and combine everything well. Serve warm or chilled. Enjoy!!
NB: Now a days we get instant palada mix in supermarkets, if you are using that please read instruction on the packet and prepare accordingly. Please add sugar in the strawberry sauce according to your taste. Enjoy cooking.
