Kurukku Kalan

Kalan / Kuruku Kalan is a traditional dish from Kerala. It is one of the side dish in Onam sadya or feast. This is made by concentrating sour curds  with vegetables like raw plantain and yam.  Here is recipe for you all to try .  




Ingredients
  • Plantain 1 Raw one
  • Yam medium piece
  • Turmeric Power 1/2 tsp
  • Black Pepper Powder 1 tsp
  • Water 2 cup
  • Fenugreek Powder 1/4 tsp
  • Curry Leaves 1 sprig
  • Salt
  • Sour Curd 500 gm
  • Coconut 1 cup , grated
  • Cumin seeds 1/4 tsp
  • Green Chilli 3 nos
  • Ghee 1/4 tsp
  • To Splutter
  • Coconut Oil
  • Mustard Seeds 1/4 tsp
  • Fenugreek Seeds 1 pinch
  • Dry Red Chilli 2 nos
  • Curry Leaves 1 sprig
Method

Peel and cut plantain and yam into medium pieces and wash them nicely with turmeric powder. Rinse well with few times in water . Take a kadai or sauce pan add 2 cups of water, then add pepper powder and mix well. Put on flame and add plantain and yam pieces. Add turmeric powder and mix well and let it cook until done. Now add salt and 250 gm curd into this and mix well. Keep the flame on low and add 1 sprig curry leaves, continuously stir the mixture till it start boiling. 

In between make a fine paste of coconut, cumin seeds, green chilli and 250 gm curd. Add this into the vegetable and mix well, check the salt and allow the curry to boil for 2 minutes. Then sprinkle ghee and fenugreek powder and mix well. The consistency you can decide, some likes more thick then cook until you get the consistency which you want. 

Now splutter mustard seeds, dry red chilli, fenugreek seeds and curry leaves. Pour this over the kalan and mix well. Cover and keep for 5 to 8 minutes. Tasty kuruku kalan is ready to serve now. 

NB: Green chilli and pepper powder you can adjust according to your spice level. Enjoy cooking..
