  • Shallots / Small Onion 8 nos, sliced
  • Green Chilli 4 nos, chopped
  • Garlic 6 nos, chopped
  • Ginger 1 small piece, chopped
  • Red Chilli Powder 1/2 tsp
  • Turmeric Powder 1/4 tsp

  • Jaggery 1 medium size piece
  • Salt
To Temper
  • Sesame Oil / Coconut Oil
  • Mustard Seeds 1 tsp
  • Dry Red Chilli 2 nos
  • Curry Leaves 2 sprigs
Method

Wash and cut bitter gourd into small cubes. Pressure cook bitter gourd cubes, shallots, green chilli, garlic, ginger along with red chilli powder, turmeric powder, jaggery and salt. Extract tamarind juice and pour that also and pressure cook for 2 to 3 whistle. Once the pressure goes down, open and check salt and boil for 2 minutes or till you get thick consistency. Remove from fire and keep aside. Take a small pan heat oil and splutter mustard seeds, dry red chilli and curry leaves, pour over the curry and serve with warm rice.

NB: Once the curry cools down you can store in a glass container and keep it in the fridge for next day use. It stays in the fridge for a week. The tastes also will be good in next day. Enjoy cooking. In tamil style they add sambar powder also in the curry. You can try that way too. Enjoy cooking..
