Baingan Bhartha , made by roasting the egg plants/ brinjal. I think several versions are there to make this dish, i have tried this with egg, here is recipe for you all to try.
- Eggplant / Brinjal 1 large or 2 medium
- Onion 2 chopped
- Green Chilli 2 slitted
- Tomato 2 medium size
- Ginger garlic paste 2 tsp
- Red Chilli powder 2 tsp
- Garam Masala Powder 1 & 1/2 tsp
- Pepper Powder 1/4 tsp
- Egg 1
- Turmeric Powder 1/4 tsp
- Coriander Leaves 2 tbsp
- Salt
To Temper
- Oil 1 tsp
- Jeera 1 tsp
Method
Wash and rinse Brinjal with water and pat dry with a clean kitchen towel, apply oil all over the brinjal and cook it over medium to low direct flame. you can use any metal stick for this to hold and turn. Turn it often for even cooking. Keep it in medium flame, so that it is not burnt outside. Cool down and peel off the skin. It will come out easily if its cooked properly.
Mash it with a fork or spoon or grind it in a mixer.
Heat a kadai with oil over medium flame and temper with jeera. Add chopped onion, saute till it transparent. Add slitted green chilli and saute for 2 seconds. Now add ginger garlic paste and saute for 1 minute. Add chopped tomatoes and salt fry till it becomes soft and mushy. Add 1/2 tsp of garam masala, red chilli powder and turmeric powder, saute till the raw smell goes. Add the mashed brinjal and little water and cook for 3 to 5 minutes. Stir in-between. Add one egg and mix and stir well, Add 1 tsp garam masala and pepper powder saute well. Add chopped coriander leaves and serve warm with chapati or roti.
NB: If you don't want egg in this you can omit that. Enjoy cooking..
