Simple and healthy rice, perfect for kids lunch box. Here is recipe for you all to try.
Ingredients
- Rice 2 cups, cooked, basmati / white rice
- Egg 3 eggs
- Green chilli 4 nos, sliced
- Onion 2 medium size, sliced
- Tomato 1 medium size, chopped
- Ginger 1 medium size, chopped
- Garlic 6 cloves, chopped
- Fennel Seeds 1 tsp
- Puthina leaves few, chopped
- Coriander leaves few, chopped
- Biriyani Masala / Garam Masala 1 1/2 tsp
- Pepper Powder 1 tsp
- Salt
- Oil
- Ghee 2 tsp
- Cloves 4 nos
- Cinnamon sticks 2 nos
- Cardamom 2 nos
- Star Anees 1
- Bay Leaves 2 nos
Method
Heat oil in a large sauce pan, add cloves, cardamom, cinnamon sticks, star anees and bay leaf. Once it leaves the aroma add sliced onion and saute for 3 minutes. Meanwhile grind ginger, garlic, puthina leaves, coriander leaves and fennel seeds and make a smooth paste. Once onions become soft add ginger garlic paste and saute for 2 minutes or till the raw smell goes off. Add green chilli and saute for 1 minute. Add chopped tomatoes and saute for 1 minute. Add eggs and saute for 2 minutes. Keep in low flame, cover and cook for 1 minute. Add pepper powder, biriyani masala and salt saute for 1 minute. Add ghee now and stir well. Add cooked rice and stir well till masala coats well with the rice. Cover the lid and cook for 1 minute. Open and add few mint leaves and coriander leaves and mix well. Serve warm with pickle or raita.
Tried this couple of days back. Was xcellent. Everybody liked it very much. Planning to make this for lunch this Sunday again. Also will try the chicken leg fry today or tmrw.
