Egg Puff

Yum
Egg Puff, its one of the popular bakery snack in Kerala. Puff pastry is filled with egg masala and bake ,  So here is simple recipe for you all to try.




Ingredients


  • Puff Pastry store bought or home made
  • Eggs 4, boiled
  • Onion 3, sliced
  • Ginger 1 medium size, chopped
  • Garlic 5 cloves, chopped
  • Green Chilli 3, sliced
  • Red Chilli Powder 1/2 tsp
  • Kashmiri Chilli Powder 1/2 tsp
  • Turmeric Powder 1/2 tsp
  • Garam Masala 3/4 tsp
  • Salt
  • Oil
  • Beaten egg for brushing
To Make Puff Pastry

  • All Purpose Flour 400gm 
  • Butter 400gm(300gm + 100gm), cold 
  • Sugar 1 tsp, powdered 
  • Salt 2 tsp 
  • Cold Water 200 ml. 

To make dough, take flour in a large mixing bowl. Add salt and powdered sugar and mix well. Now add 100gm cold butter and crumble it with your hands. Now add in ice cold water slowly and make into a soft dough. shape the dough into a rectangle and cover it with plastic wrap or cling film. Place it in a steel plate and keep it in the fridge for 30 minutes. 


Now take the 300gm of cold butter and place it over a plastic wrap. Put another plastic wrap over the top of the butter and use a rolling pin to bash the butter into a little thin rectangle. 

Spread a plastic wrap and place the dough over it. Cover with another plastic wrap and roll it into thin sheets. Now fold them from both ends and invert them and roll it again into thin rectangle. Fold them from both ends. Cover this with plastic wrap and put them into fridge for 30 minutes. 

Now repeat the above step for 3 more times. So you are totally doing it for 4 times. Now take the dough out of fridge. Roll it into a thin rectangle sheet. cut it into the squares. Place the dough squares in fridge for 1 hour or 30 minutes in freezer. Now you can use it to make any puffs you like. 

Method

Heat a pan with oil and add chopped ginger and garlic, saute for 1 minute. Now add sliced onion and saute till it is transparent. Add sliced green chilli and saute well. Add chilli powder, turmeric powder, kashmiri chilli powder and garam masala. Mix well and saute in low heat for 2 minutes. Then allow it to cool down. 

Pre heat oven to 180 degree C.

Meanwhile boil 4 eggs and keep aside. Remove from shell and slice into tow. Take a puff pastry and spoon a tbsp of the cooled onion mix and place the egg cut side down on top of the mix. 

Pull the four edges lightly over the egg and gently press down the ends. Repeat the same with rest. and brush with beaten egg. Place them on a greased baking tray or baking mat at 180 degree C for 40 50 minutes or until done. Serve warm with hot tea.


NB: I used store bought puff pastry, but you can make puff pastry at home and bake. Make sure that the filling is completely cooled before filling in the puff pastry. Adjust the spices according to your taste. Baking time may vary with oven.
