Simple Mango Pickle

Simple mango pickle for this festive season. Im sure everyone will like mango pickle and its the very popular pickle in South India. There are multiple way of making mango pickle, this one is simple and easy to make.  Here is recipe for you all to try.



Ingredients
  • Raw Mango 1/2 kg
  • Garlic 6 cloves
  • Ginger 1 medium size piece
  • Green chilli 2 nos, chopped
  • Curry Leaves 1 sprig
  • Mustard Seeds 1 tsp
  • Vinegar 1/2 cup
  • Boiled Water 1/2 cup
  • Red Chilli Powder 3 tbsp
  • Kashmiri Chilli Powder 1 tbsp
  • Turmeric Powder 1/2 tsp
  • Asafoetida Powder 1/4 tsp
  • Fenugreek Powder 1/4 tsp
  • Salt
  • Gingelly Oil 3 to 5 tbsp
Method

Cut the mango into small pieces without peeling. Add salt in to these pieces, mix well and keep for 2 days in a tight container. Once in a while shake the bottle and keep aside.

On the third day heat oil in a kadai and splutter mustard seeds and curry leaves. Put the flame on low and then add finely chopped ginger, garlic and green chilli. Saute till the raw smell goes.

Now add chilli powder, turmeric powder, asafoetida powder and fenugreek powder and saute for 2 seconds. Add vinegar and water into this and mix well. Allow to boil. Turn off the fire, remove and keep aside. When cool add the mango pieces that we kept aside. Mix well and check salt, add if needed.

Keep this in a tight container. You can keep this pickle for few days in room temperature afterwards you can keep it in the fridge. 

NB: Red chilli powder adjust according to your spice level. Water and vinegar add according the consistency which you want. Enjoy cooking..
