Beetroot Rasam With Coconut

Onam, festival of Kerala is nearing and I know you all getting ready to celebrate Onam and from today I am posting few recipes which you can include on your Onam sadya or feast. 

Beetroot Rasam, its a special healthy rasam with freshly ground coconut masala. I was going through some recipes in one magazine regarding deferent types of rasam  and one rasam that really caught my attention was this beetroot rasam with coconut. Then I decided to make this and me and husband liked it very much. So here is recipe for you all to try. Im sure you all will like this variety rasam during this festive season. 



Ingredients
  • Beetroot 1 medium size, grated
  • Dry Red Chilli 8 nos
  • Coriander Seeds 1 tbsp
  • Curry Leaves 1 sprig
  • Coconut 2 tbsp, grated
  • Tamarind , lemon size soaked in water
  • Turmeric Powder 1/4 tsp
  • Oil
  • Salt
To Splutter
  • Mustard Seeds 1 tsp
  • Garlic 6 to 8 cloves
  • Dry Red Chilli 2 
  • Curry Leaves 1 sprig
  • Asafoetida Powder a pinch
Method

Take a pressure cooker and heat on medium flame and add beetroot with little salt, once its boiled keep it aside to cool down. Once it cool down put it in a blender and make paste. 

Take a fry pan and add oil , once its become hot add coriander seeds, dry red chilli an curry leaves stir fry for 2 minutes. Grind this roasted mix with coconut and make a fine paste and keep it aside.

Take a kadai or sauce pan on medium heat  and add tamarind water with turmeric powder and salt, once it starts boiling add ground beetroot mix and mix well. Once its boiling add ground coconut mix and combine well. Let it boil on low flame for 2 to 3 minutes. Now check salt if need add accordingly. Remove from flame and keep it aside. Take a small size pan and add oil splutter mustard seeds, then add sliced garlic and fry until garlics are down in colour, add dry red chilli and  curry leaves, put off flame and add a pinch of asafoetida and mix well . Pour this over the rasam and serve warm with rice. Enjoy cooking..

NB: Dry red chilli add according to your spice level. If you don't like coconut , can omit coconut in this recipe and add some rasam powder. But you get deferent taste when you add coconut. Enjoy cooking..
