- Rice Flour 1 cup
- Wheat Flour 1/2 cup
- Ginger medium size, chopped finely
- Green chilli 2 nos, chopped finely
- Onion 1/4 cup, chopped finely
- Curry Leaves , 1 sprig, chopped finely
- Coriander Leaves few, chopped finely
- Cumin Seeds 2 tsp
- Salt
- Water
- Ghee / Oil
Method
Take a large bowl and add rava, rice flour, wheat flour , chopped ginger, chopped green chilli, chopped onion, curry leaves, coriander leaves, cumin seeds and salt. Now add enough water to make a very thin batter as poring consistency. Leave the batter to rest for 20 to 30 minutes. If you are in a hurry you can start making dosas after 10 to 15 minutes else let the batter rest for 20 to 30 minutes.
The batter should be in running consistency, then only dosa will come out thin. Heat a non stick dosa pan , once it hot enough put little oil or ghee then pour a paddle full of batter from the outward edge of the pan in a circular motion to the centre. Drizzle a tsp of oil or ghee over it and cover it with a lid and cook for 1 to 2 minutes on medium flame. Now remove the lid and increase the flame and cook for 1 minute or until it crispy and golden colour. Remove dosa into a plate and serve hot with chutney or sambar.
NB: Before preparing the next dosa reduce the flame and rub some oil or ghee. If you want you can temper and add cumin seeds and curry leaves, it gives nice flavour to the dosa. Enjoy cooking..
