Tomato Hummus, just twist with plain hummus, its flavored with sun dried tomato. So it has some tangy taste and deferent texture. You can use this as a sandwich spread or as dip with vegetables and chips. Here is recipe for you all to try. I have posted easy hummus recipe earlier.
- Chick Peas / Garbenzo Beans 400gm, canned or cooked
- Sun - dried Tomatoes chopped, 1/2 cup
- Tomato Sauce 1 1/2 tbsp
- Roasted Garlic Cloves 6 nos
- Lemon Juice 1 tbsp
- Sesame Oil 1 tsp OR Tahini 1 tsp
- Olive Oil 2 tbsp
- Water
- Salt
Method
If using canned chick peas, rinse with cold water and drain water well and keep it aside. Take a food processor or blender and add roasted garlic and chopped sun-dried tomatoes with little water and puree them until smooth. Now add drained chickpeas, salt and tomato sauce and blend to combine everything well. If need add little water to combine everything well. Now remove this into a bowl and add sesame oil or tahini, lemon juice and olive oil. Just check salt if need add accordingly. Serve this with olives and pita bread.
NB: If you dont have sun-dried tomatoes and use roasted tomatoes instead. If you feel need some spicy in this then add little paprika powder or red chili powder. If you feel to add some extra flavor to this then add some fresh leaves in it like mints, rose mary etc. Enjoy cooking.
