Tofu Stir Fry

Tofu Stir Fry, stir frying is a fast and easy way of making a meal. Tofu does not have strong flavor of its own but takes on flavor from whatever it is mixed with. Here I used ginger, garlic and chili flakes for the flavours. In this stir fry I have added vegetables with tofu so its a protienful single meal. Tofu is a good source of protein and contains all eight essential amino acids. It is also an excellent source of iron and calcium and the minerals manganese, selenium and phosphorous. In addition, tofu is a good source of magnesium, copper, zinc and vitamin B1. So try to include Tofu in your diet. Here is Tofu stir fry recipe for you all to try.



Ingredients
  • Tofu 500gm, cut into medium size cubes
  • Soya Sauce 1/2 cup
  • Balsamic Vinegar 1 tsp
  • Garlic 4 cloves, finely chopped
  • Ginger 1 medium size, finely chopped
  • Onion 1 thinly sliced
  • Carrots 2 thinly sliced
  • Snowpeas 150 gm, thinly sliced
  • Capsicum 1 medium size, thinly sliced
  • Baby Corn 200gm, sliced
  • Green Chili 1 sliced
  • Chili Flakes 1 to 2 tsp
  • Salt
  • Oil
Method

Take a medium size glass bowl and put chopped ginger, garlic, soya sauce and balsamic vinegar. Add tofu in it and combine well. Cover and keep it in the fridge for 2 to 3 hours. 

Heat the wok until very hot, add 1 tbsp of oil and swirl it around to coat the side. Drain the tofu and reserve the marinade. Stir fry the tofu over high heat until it is golden brown. Remove the tofu from they ok and drain on kitchen tissues. 

Reheat the wok, add 1 tbsp of the oil and stir fry onion, carrot, green chili and capsicum over medium high heat for 4 to 5 minutes, or until the vegetables are tender. Add the snow peas and cook for 3 to 4 minutes. 

Increase the heat to high and add the reserved marinade, tossing the vegetables in the marinade until they are thoroughly coated and the sauce boils. Add the tofu to the wok and toss until the mixture is well combined and the tofu is heated through. Add the 1 tsp of chili flakes and mix well. Season with salt and pepper and serve immediately. 

NB: Please take care while adding salt because soya has salt in it. Ginger, garlic and chili flakes  you can add according to your taste. The color of the dish may change according to your soya sauce color. Enjoy cooking.
