Its a simple recipe, kids will love this. Here is recipe for you all to try.
For the Chicken Sausages
- Chicken Sausages 250 gm, sliced
- Garlic cloves 4 nos, chopped finely
- Ginger chopped 1 small piece, chopped finely
- Green Chilli 3 nos, chopped
- Onion 1, white, chopped
- Cherry Tomato 4 nos, sliced
- Pepper Powder 1 tsp
- Salt
For the Pasta and Pesto
- Fresh Basil 1 big bunch
- Garlic 1 clove, chopped
- Almonds 25gm, blanched
- Parmesan Cheese 25gm,
- Virgin Olive oil 2 tbsp
- Lemon 1 juice, squeesed
- Penne Pasta 300gm
- Water
Method
Combine the basil, garlic, almonds, parmesan cheese, 1/4 cup olive oil and lemon juice in a food processor and blend until well combined and has the texture of fresh pesto, set aside.
Bring a pot of lightly salted water to a boil. Cook the pasta in boiling water until cooked yet firm to the bite, about 11 minutes, drain and keep aside. Transfer the pasta to a large bowl, pour 1 tbsp olive oil over the pasta and toss to coat, set aside.
Heat 1 tbsp olive oil in a large skillet over medium heat. Roast the almonds lightly browned, removed to a plate and set aside. Add the chopped garlic and ginger and saute well for 1 minute. Now add the chopped onion and saute' well for 2 minutes. Add the green chilli and saute well. Add the pepper powder and salt and saute' well. Add sliced sausages and saute' well. Cover and cook for 3 minutes. Open the lid and add sliced tomatoes and saute for 1 minute. Now add basil pesto sauce and combine well. Add penne pasta and mix well. Put off flame and serve immediately.
NB: If you want add grated parmesan cheese while serving. Instead of almonds you can add pine nuts. You can also freeze left over pesto sauce. Enjoy cooking.
