This is simple and easy soup is on the table in less than half an hour, it has smooth texture and mild flavour.

- Broccoli 1
- Onion 1 Chopped
- Garlic 2 cloves chopped
- Green chilli 1 chopped
- Chicken broth / Water 3 cups
- Cream 1/2 cup
- Salt and freshly ground black pepper

Method
Put olive oil in a medium size sauce pan over medium high heat. Add broccoli, onion, garlic, salt and pepper and saute until onion is translucent, about 6 minutes. Add stock / water and bring to boil. Simmer uncovered until broccoli is tender, about 15 minutes. Pour in cream and combine well. Put off flame and puree the soup with hand blender. Check salt and pepper, add if required. Serve hot with home made croutons.
Homemade Croutons
Preheat oven to 200 degree C.
Cut bread into cubes and place in a large bowl. Drizzle cubes with olive oil, salt and pepper. Mix well.
Spread seasoned bread onto a sheet pan and bake for about 10 to 15 minutes.
