Malva Pudding , South African Desert

Malva Pudding is a sweet pudding of Cape Dutch origin. It contains apricot jam and has a spongy caramelized texture. A cream sauce is often poured over it while it is hot, and it is usually served hot with custard or ice cream. Its a simple desert with minimum ingredients, once you hear the name you may think its a complicated pudding but not complicated one but its delicious and rich pudding for you all can try during this festive season. Malva pudding is a South African favorite, many restaurants in South Africa serve this desert. Here is recipe for you all to try.





Ingredients

Sugar 1/2 cup, 
Self raising flour 1 1/2 cup
Eggs 2
Baking soda 1 tsp
Apricot Jam 2 tbsp
Butter 2 tbsp
Vinegar / Apple Cider Vinegar 1 tbsp
Milk 1/2 cup
salt a pinch

For the sauce

Cream 1 cup
Butter 1 cup
Boiled Water / Fresh Orange juice 1 cup
Sugar 1/2 cup, 
Vanila paste or Vanila extract 1 tsp

Method

Pre heat oven to 200 degree C for 8 minutes. Beat sugar and eggs until fluffy then add jam and beat well until a creamy consistency. 

In a separate bowl add flour and baking powder combine well and keep it aside.
Melt butter in a small sauce pan on a medium heat and add the vinegar and milk. Now add the above mixture to the flour and mix well. Now add the eggs mixture and combine well. Pour into an oven proof casserole dish or tin tray that takes about 2 liters. 

Bake at 190 degree C for 45 minutes until the top is nicely browned. 

Now we can make the sauce, take a small sauce pan add water or orange juice and keep it on medium heat and add butter, sugar cream and vanilla paste, boil well until melt the all ingredients. Pour this sauce over the pudding once its comes out from the oven. Serve it with ice cream or custard or as it is with some fresh cream. 

NB: Sugar you can use brown sugar or caster sugar for this recipe. Enjoy cooking..
