Chocolate Fruit Cake

Chocolate Fruit Cake, Its deferent from traditional fruit cake. This time I didn't soak dry fruits and all to bake fruit cake for this Christmas, then was searching for a fruit cake recipe and found this one and tried, recipe courtesy 'BBC Food'. We liked this version as its not a typical one as I said so if you are not keen into traditional fruit cake recipe then do try this one. Because of chocolate it has a bit of browny texture. It has dry fruits like our traditional fruit cake. So here is  delicious and rich fruit cake recipe for you all to try..




Ingredients
  • Butter 200gm
  • Sugar 200gm ( dark brown soft once)
  • Eggs 3 nos
  • Dark Chocolate 100gm (used 80 % dark)
  • Brandy 75ml 
  • Vanila Extract 1 tsp
  • Raisins 200 gm
  • Currants 200gm
  • Cranberries 100gm
  • Cherries 100gm
  • Mixed Peel 100gm
  • Self - Raising Flour 200gm
  • Almond flour / Ground Almonds 100gm
  • Cocoa Powder 3 tbsp
  • Mixed Spice 1 1/2 tsp
Method

Take a large sauce pan heat it on medium flame and add butter, sugar, chocolate(broken into chunks), brandy, vanilla and dried fruits. Heat gently, stirring occasionally until everything has melted together and combines well. Remove from the heat and keep it aside.

Heat oven at 180 degree C for 6 minutes. Grease(butter and flour) or line( butter paper) a deep cake trey, if using round then 20 cm or square 18 cm. 

Mix the flour, almond flour, cocoa powdered spice together. Stir the eggs into the slightly cooled chocolate and dry fruits mixture in the sauce pan. Add now the flour mixture into it and combine everything well. Pour this mixture into the greased cake tin and bake at 150 degree C if its Fan oven or 130 C if its gas for 1 hr to 1 hr 30 min or until a skewer comes out clean.

Cool in the tin. Once its cools down completely remove from the tin and decorate if you want then serve. Greaseproof-wrapped cake will keep for 2 months in an airtight container. 

NB: Here I used Muscuvado soft sugar. Mixed spices such as cinnamon powder, nutmeg powder and ginger powder. If you dont get self raining flour then use all purpose flour and add baking powder and baking soda accordingly. Once the cake is getting baked and reaching 40 minutes just open and check if its becoming too dark on the top portion then cover it with aluminum foil and continue baking until its ready.
